1 tbsp. olive oil
⅓ cup onion, finely chopped
4 cloves garlic, minced
2 lbs. roma tomatoes, peeled, seeded and chopped
½ cup dry red wine
1- 2 tbsps. balsamic vinegar
½ tsp. salt
½ tsp. black pepper
½ cup fresh snipped basil

Directions:

In a large saucepan heat oil over medium heat. Add onion and garlic; cook 3-5 minutes or until onion is tender, stirring occassionally. Stir in all remaining ingredients except basil. Bring to boiling; reduce heat. Simmer uncovered 20-25 minutes or until slightly thickened, stirring occassionally. Mash with potato masher to reach desired consistency. Stir in basil. Store in refrigerator up to 3 days or freeze up to 6 months. (If fresh roma tomatoes are not available, subsitute two 28 oz. cans Italian plum tomatoes, drained and chopped (about 3 cups) and reduce salt to ¼ tsp.)
