1/4 lb sausage meat
1 lb lean ground beef or chicken
1 each celery stalk, onion and large carrot, chopped
2 cloves garlic, minced
4 cups chicken broth
1 can (796 ml) crushed tomatoes, undrained
1 can chickpeas, rinsed
1 tsp. Italian seasoning
3 cups rotini pasta, uncooked
1 cup mozza-cheddar cheese, shredded
1/4 cup loosely packed basil leaves, coarsely chopped or 1/8 cup dried basil

Directions:

Cook sausage and ground meat in a large skillet on medium heat with celery, onions, carrots and garlic until done.
Stir in broth, tomatoes, chickpeas and seasoning, cover. Bring to a boil. Add pasta, simmer, covered, 15 min. or just until pasta is tender, stirring occasionally.
Sprinkle with cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted. Top with basil.

The original version of this recipe called for 1/4 lb salami cut into 1/4"-wide strips, I substituted for mild sausage meat. If you prefer a spicier version use medium to hot sausage meat.
