2 cloves garlic, finely minced
¼ c vegetable or olive oil
2 tbsp lemon juice
salt to taste
¾ tsp ground black pepper
¼ tsp dry mustard
¼ tsp granulated sugar
5 tbsp grated parmesan cheese
1 egg yolk optional

romaine lettuce
croutons

Directions:
Directions:
Place all ingredients in a jar with a tight fitting side and shake well until blended. Use immediately if yolk is added; otherwise dressing keeps well refrigerated.

Clean romaine lettuce and dry well. Break into pieces and place in a large salad bowl.

Toss with dressing, adding golden brown croutons last.
