1 loaf (8oz) fresh baguette
3 tbsp olive oil, divided
1 clove garlic, minced
½ tsp Italian seasoning
3 cups seeded, chopped tomato, well drained (roma or vine ripe in summer)
3 tbsp chopped fresh basil
2 tbsp balsamic vinegar
¼ tsp salt
¼ tsp freshly ground pepper
½ lb sliced mozzarella, cut into 50 pieces

Slice baguette into ¼ inch slices. Place on baking sheets in single layer. Combine 2 tbsp of the oil, garlic, and Italian seasoning in small microwav-safe dish. Microwave on high for 1-1½ min or until mixture starts to bubble. Lightly brush oil mixture on bread. Bake in 375º oven for 5-7 min or until dry and firm. In medium bowl, combine tomatoes, basil, vinegar, remaining 1 tbsp oil, salt and pepper. Let stand 10 min. Place 1 piece cheese on each slice of toast. Bake in 375º oven for 1½-2 min or until cheese is melted. Top each with a heaping teaspoon of tomato mixture. Serve immediately.
