6 slices bacon, chopped
2 onions, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1/2 tsp. each hot pepper flakes, dried basil and oregano
1/4 tsp. each dried marjoram, rosemary and thyme
5 cups chicken stock
1 can (796 ml) tomatoes, chopped
1 cup elbow macaroni
1 can (398 ml) artichoke hearts, drained and cut into wedges (optional)
1/4 cup parsley
Salt and pepper to taste
1/2 cup Parmesan cheese

In large heavy pot, cook bacon, onions, celery, garlic, hot pepper flakes, basil, oregano, marjoram, rosemary and thyme over medium-high heat 3 to 5 minutes or until onions are softened. Stir in chicken stock and tomatoes, with their juice. Bring to boil over high heat. Add macaroni. Reduce heat to medium, simmer, uncovered, 10 minutes or until macaroni is tender. Stir in artichokes, heat through 2 to 3 minutes. Taste and adjust seasonings. Serve garnished with parsley and sprinkled with Parmesan cheese.
