35 whole saltine crackers
3/4 cup salted butter
3/4 cup brown sugar, packed
3 cups semi-sweet chocolate chips
3/4 cup roasted and salted mixed nuts, coarsely chopped
3/4 cup dried cherries or cranberries

Line an 11" x 17" rimmed baking sheet with parchment paper and coat with non-stick spray. Lay crackers on the paper in a single layer.

Combine butter and brown sugar in a saucepan and cook over medium-low heat, stirring occasionally, until butter is melted. Then bring to a boil over medium heat and cook for exactly three minutes (set timer), stirring frequently. Carefully, pour the mixture over the saltines, covering them. Spread evenly over the crackers using a spatula. This mixture will harden fairly quickly so you'll need to work fast.

Put the semi-sweet chocolate chips into a microwave-safe bowl that holds at least four cups. Microwave on 50% power for one minute and stir. Continue heating in 30 second intervals on the same power, stirring in between, until melted. Evenly spread the melted chocolate over the crackers. (At this point, the mixture seemed too thick to spread, so I added a little cream. Big mistake - it got weird and lumpy. Figure out how to thin the chocolate in a better way.) Quickly spread the nuts and fruit over the top and gently push them into the chocolate.

Refrigerate the bark for an hour then break into pieces and serve. Store in an airtight container for up to two weeks.
