1 stalk celery, diced
1/2 tsp onion powder
3 lbs russet potatoes, medium
1/2 sweet onion, diced
4 eggs, hard boiled and chopped
1 C mayonnaise
1/4 C yellow mustard
1/4 C sweet pickles or sweet pickle relish (use dill if preferred)
2 tsp sugar
2 tsp apple cider vinegar
Paprika, optional

Wash and slice unpeeled potatoes in half. Put in a large dutch oven with enough water to cover. Cook until tender. Drain and allow to cool. Mash into small chunks using a fork or masher.

Cover eggs in a small to medium saucepan and bring to a boil. Turn off the heat, cover, and allow to sit for 12-13 minutes. Run under cold water to cool. Chop once cooled.

In the meantime, chop/dice vegetables.

Add all ingredients, except paprika, together in a large bowl. Mix gently to incorporate thoroughly.

Garnish with paprika if desired.

Cover tightly.

Can be served warm or cold.
