2 cups sugar
1 1/2 cups vegetable oil
5 large eggs
2 cups flour
1 t salt
2 t baking soda
2 t cinnamon
3 cups carrots, peeled and grated
1 1/2 cups walnuts

Directions:
Directions:
Preheat oven to 350º.
Beat together the sugar, oil and eggs.
In a separate bowl, combine flour, salt, baking soda and cinnamon and whisk well.
Add carrots and nuts.
Pout into two 9" round cake pans, coated with cooking spray.
Bake 40-45 minutes.
