12 cups cubed dried bread
1 pound sausage (use sausage fat)
3/4 cup chopped onion
1 1/2 cup chopped celery
1 tsp poultry seasoning
1 tsp sage
2 cups chicken broth
12 pound turkey

Directions:
Directions:
Stuffing
-Cook sausage in skillet; drain fat
-Sauté onion and celery in sausage fat (only use 1/3 to 1/2 cup of fat)
-Mix in seasonings
-Add to bread cubes
-The add broth gradually, so as not to make soggy

Turkey
-Wash bird then stuff; pat dry
-Rub turkey with melted butter all over
-Cover turkey with cheese cloth and base to cloth isn't dry
-Cook turkey
