2¼ cups all purpose flour
1½ tsps. baking powder
1 tsp. baking soda
½ tsp. salt
4 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
2 large eggs, room temperature
⅓ cup vegetable oil
1 tsp. vanilla extract
1¼ cups brown sugar, packed
1 cup buttermilk, room temperature (or 1 cup heavy cream + juice ¼ lemon)
1½ cups carrots, grated

Directions:
Directions:
Preheat oven to 375º. Sift together flour, baking powder, baking soda, salt, cinnamon, allspice and nutmeg. Set aside. Whisk together eggs, oil, vanilla, brown sugar and buttermilk (or heavy cream and lemon juice). Pour dry ingredients into wet ingredients and stir with spatula until most of the flour is mixed in. Add grated carrots and fold in until just combined. Spoon batter 90% full into lined muffin pan. Bake on a rack in top third of oven for 20 to 25 minutesr until cake tester comes out clean.
