For the cake ---
2 eggs
2 c sugar
2 c flour
2 t. soda
1/2 c. oil
1 t. cinnamon
1 t vanilla
½ t salt
4 c coarsely chopped apples, unpeeled
I c. chopped nuts, optional

For the sauce ---
1/2 c. butter or margarine
1 c. white sugar ( cut the amount of sugar)
1 T. corn starch
1 t. vanilla
½ c. milk

Cake --
You may roughly chop the apples in the food processor and then add the first eight ingredients. If you do not have a food processor, mix the first eight ingredients with a mixer and fold in finely chopped apples.
Bake in a sprayed or greased 9x13 inch pan at 350 for 40 minutes.
Serve with caramel or butter sauce.

Sauce --
Place in a saucepan and simmer for about a minute. Serve warm over cake.
