Zucchini Casserole Recipe

2 lbs. zucchini, sliced (do not peel)
cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 8oz. box of seasoned stuffing
cup butter

Cook sliced squash and onion in boiling water slightly salted about 3 min. Squash with be a little crisp.
Combine soup and sour cream. Stir in shredded carrots, squash and onions. Add salt to taste.
Mix stuffing with melted butter.
Spread of the stuffing in 9x12 baking dish. Spread vegetable mixture on top.
Bake at 350 for 15-30 min.
