Ingredients: 4-5 each - bone-in, skin-on chicken thighs 2 tbsp. - high heat cooking oil (refined coconut oil or avocado oil) Salt & Pepper Dry seasonings of choice

Directions:Preheat the oven to 425º F.
Pat raw chicken thighs dry and season both sides with salt and pepper.
Heat a large cast iron pan and the coconut oil to medium-high heat. Place the chicken thighs in the pan skin side down; careful to not overcrowd the pan. Sprinkle desired seasoning on the underside of the chicken thighs. (If spices are added to the skin side they will burn.) Cook skin side down on the stove top for 12 minutes. Leaving the chicken thighs skin side down, move the pan to the oven and cook for an additional 12-14 minutes or until the internal temperature is 165º F. |

Notes: Note: Coconut oil is used in this recipe due to its high smoke point. If other oils are used the temperature of the oven would need to be reduced and the cook time increased.
