2 granny smith apples
1 cups power greens (chard, spinach, and kale)
2 oz. goat cheese
1/4 cup pecans
1/3 cup dried cranberries

Citrus Vinaigrette
1 small shallot, finely chopped
¾ cup olive oil
¼ cup Champagne vinegar or white wine vinegar
3 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
¼ teaspoon finely grated lemon zest
Kosher salt and freshly ground black pepper

Cut apples into thin slices. Don’t worry about coring the apples. It looks prettier without it 😉
Layer of greens
Layer of apple
Layer of goat cheese crumbles
Layer of pecans; loosely chopped
Layer of dried cranberries
Repeat layers, 3 times


Dressing:
Combine first 6 ingredients in a small jar; season vinaigrette to taste with salt and pepper. Shake to blend.
