4 large potatoes, baked, peeled and chopped
1/2 cup butter or margarine
1 onion, diced
3/4 cup flour
48 oz. chicken broth
Celery salt to taste
1/2 tsp. black pepper
1/4 tsp. dried basil
1/4 tsp. sugar
1 1/2 cups cream
3 cups shredded cheddar cheese (divided)
4-6 slices bacon, fried crisp and chopped (save the grease and use with the butter)
Chopped green onion for garnish

Directions:
Directions:
In a large soup pot, melt the butter and some of the bacon fat if you want. Add the onion and cook until softened. Add the flour and stir for about 3 minutes. Slowly add the chicken stock, salt, pepper, basil and sugar. Bring to a boil, stirring often with a whisk. Gradually add the cream until you've reached the proper consistency. Add the potatoes, 2 cups cheddar cheese and most of the bacon bringing everything to temperature.

Garnish with extra cheddar cheese, bacon and green onion.

Note: Can use milk in place of heavy cream or a combination. Soup is very rich.
