2 lbs. potatoes
4 cups chicken broth
2 Tbsp. olive oil
1 tsp. garlic powder
salt and pepper, to taste

Directions:
Directions:
Peel potatoes and cut into fourths.
Put potatoes into a saucepan with 4 cups of chicken broth and boil until tender. Drain.
Mash the potatoes with olive oil, garlic powder, salt, and pepper.
Place potatoes in a greased casserole dish and heat in the oven at 350 for 25 minutes.

[Tip: This recipe can be used with 4 cups of leftover mashed potatoes by mixing the potatoes with 1 tsp. powdered chicken bouillon and the seasonings (garlic powder, salt, and pepper) and if the potatoes are too dry, add a small amount of liquid (water, milk or chicken broth) before placing in the casserole dish and baking.]
