Grandma Bradley


1 c. AP flour
1 4-serving size package instant pistachio pudding mix
c. mini chocolate chips
⅔ c. sugar
2 tsp. baking powder
tsp. salt
2 beaten eggs
1 c. milk
c. vegetable oil
1 tsp. vanilla extract
1 c. cream cheese frosting

1. Grease muffin tin. Preheat oven to 375.
2. In a large mixing bowl stir together flour, pudding mix, chocolate chips, sugar, baking powder, and salt.
3. In a small bowl combine beaten eggs, milk, oil, and vanilla extract. Stir into flour mixture just until combine.
4. Fill muffing tin ⅔ full. Bake for 18-20 minutes until golden brown. Cool on a wire rack and once cool to the touch, frost with cream cheese frosting.
