6 slices bacon, finely chopped
3 lbs boneless beef cubes cut to 1 inch cubes
Salt & Pepper
1 large onion, chopped
4 medium carrots,peeled and sliced in one inch diagonal chunks
1 bottle good red wine (something you would drink!)
3 cups beef broth
3 tablespoons tomato paste
1 lb.fresh mushroms, sliced
3 cloves garlic, minced
4-5 stalks fresh thyme, or equivalent dried
12+ pearl onions, peeled
1 bay leaf
2 tablespoons unsalted butter
2 tablespoons flour

To Make:

1. In a large skillet, cook bacom over medium heat.
2. Dry beef cubes and saute them in batches
