1 cup chopped sweet onions, such as vidalia
2 tsp minced garlic (2 cloves)
2 cups (1 pint) cherry or grape tomatoes, halved
salt & pepper
1½ T balsamic vinegar
1½ T julienned fresh basil
2 lb salmon cut crosswise into 4 pieces

1. Heat 3T olive oil in a medium sauce pan. Add onion and sauté over med-low heat for 5 minutes until very tender but not browned. Add garlic and sauté for 1 more minute. Stir in the tomatoes, 1 tsp salt, ½ tsp pepper and cook over med-low heat 10-15 minutes, stirring occasionally, until liquid evaporates and the tomato sauce thickens slightly. Remove from heat, stir in the vinegar and basil.
2. Place a large cast iron pan over high heat for 15 minutes. Brush the salmon all over with olive oil, sprinkle liberally with salt and pepper and place it skin side up in the pan. Cook the fish 3-4 min without moving them, until browned. Turn the salmon skin side down and transfer the pan to a 425º oven for 13-15 minutes. Remove salmon from skillet and place on a serving platter and cover with foil, rest for 5 minutes.
3. Plate salmon and top with tomato topping.
