Ingredients:  
4 slices thick cut bacon - cooked and chopped
1.25 lb chicken breast - cut into cubes
1/2 cup diced red onion
1/4 cup scallions - chopped
1/2 cup of your favorite bbq sauce
1 Tbsp ground ginger
2 Tbsp soy sauce
1 red bell pepper - cut into strips
2 cups fresh pineapple chunks

Directions:
Directions:
1. Add the onions and ginger to bacon in a skillet. Saute for 1 minute. Add chicken pieces. Stir and cook for 2-3 minutes. Push chicken to the side and add bell pepper.
2. Sear the peppers about 1-2 minutes. Then add in the pineapple chunks, BBQ sauce, and soy sauce. Stir well to coat and simmer 4-5 minutes. Sprinkle with scallions.
Serve with rice or salad.
