1 lb lean ground beef or turkey

1 cup barbecue sauce

3 cups Pioneer Biscuit & Baking Mix

1 cup milk

3/4 cup shredded Cheddar cheese

Directions:
Directions:
Cook ground meat in a skillet over medium heat until well-browned. Drain. Stir in barbecue sauce. Set aside.

Preheat oven to 375º F. Lightly oil a muffin pan. Set aside.

Add Pioneer Biscuit & Baking Mix to milk in a bowl and blend well.

Spray the back of an ice cream scoop with no stick cooking spray. Scoop and fill each muffin cup with dough. With back of ice cream scoop, press dough to cover bottom and sides of cut to form a well. If needed, use a spoon to smooth out dough.

Spoon 1/4 cup meat mixture into each biscuit-lined cup.

Bake 15 minutes.

Sprinkle each biscuit cup with 1 T cheese. Continue baking 3-5 minutes until cheese melts and crust is golden brown.

Cool in pan 5 minutes
