2 cartons (32 ounces each) Chicken OR Vegetable Broth
1 medium sweet onion, cut in half then sliced thin
1 pound bulk hot Italian Sausage
1 pound bulk mild Italian Sausage.
1 package (9 ounces) mini cheese tortellini (fresh or frozen)
2 can (14-1/2 ounces) fire-roasted or Italian diced tomatoes
1 tsp. Italian seasoning
1/2 tsp. Oregano
3 cups fresh spinach, rough chopped

In a 6-qt. stockpot, bring broth to a boil.
mix sausage together to blend the flavors.
Scoop sausage by heaping teaspoonfuls into boiling broth. *this is not a formed meatball so it is easier to make this soup!
Add tortellini, tomatoes and Italian seasoning; return to a boil.
Reduce heat; simmer, uncovered, 10-12 minutes or until sausage is cooked through and pasta is tender.
Stir in spinach until wilted. (about 3 minutes)

*this soup is great using other pasta shapes OR, if you prefer, potatoes cut into 1/2 inch cubes.

Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.
