Fresh herbs of your choice (I like using arugula, dill, tarragon, mint, basil and parsley)
Good quality feta in brine (Greek or Bulgarian, you can get Greek at Costco or Trader Joe’s)
Sliced radishes
Chopped scallions
Walnuts, almonds or pistachios
Good quality olive oil (I can’t imagine anything better than I get at Mediterranean Delicacy at Christ Church farmers market, or online at www.mediterraneandelicacy.com)
Pita or lovash (Persian flatbread available at middle eastern grocery stores) for serving

There is no “right” way to make this. Just assemble the ingredients attractively on the plate, top the feta with the olive oil and some fresh ground black pepper, and serve with the pita or lovash on the side.
