2 cups all purpose flour
1 cups sugar
3 eggs
cup vegetable oil
2 cups grated and thoroughly drained zucchini (do ahead)
2 tsp vanilla
tsp baking powder
2 tsp baking soda
tsp cinnamon
1 tsp salt
1 cup raisins
1 cup chopped walnuts

NOTE: Grate and drain zucchini ahead of time.

Preheat oven to 375.
Beat eggs in bowl. Stir in oil, sugar, vanilla and zucchini.
Sift flour, baking powder, baking soda, salt and cinnamon together.
Stir wet ingredients into dry ingredients. Add zucchini and nuts. Stir well.
Spoon into greased 8"x5" loaf pan. Bake for 1 hour.
