8 cups chopped fresh cucumbers
4 large chopped onions
4 large chopped bell peppers
2 cups vinegar
3 cups sugar
canning salt to taste, about 2 tablespoons

Directions:
Mix vegetables in large saucepan. mix vinegar, sugar and salt and pour over vegetables (if too dry mix more vinegar, sugar, salt solution and pour over relish). Bring to a boil and boil for 20 minutes, can and seal. Yield about 5 pints.

This recipe was given to me by Rosie Walker and I use it all the time. It makes wonderful tartar sauce:Drain 1 pint relish very well, add 1 qt mayonaise, 2 chopped sweet onions.
