White Chicken Chili Recipe

1 medium onion
2 cloves garlic
1 T olive oil
4 chicken breasts, cooked and chopped (can be boiled in water)
2 cans (14 oz) chicken broth
1 can (4 oz) green chiles, chopped
2 tsp ground cumin
2 tsp. oregano
1/2 tsp. to 1 tsp. cayenne pepper
3 cans (14.5 oz) great northern beans, drained/divided
Shredded cheddar or monterey jack cheese (optional)

In large saucepan, cook onion and garlic in oil for 10 minutes.

Add chicken, broth, green chiles, cumin, oregano, cayenne.

Bring to boil. Reduce heat to low.

Mash one can of beans with a potato masher and add to saucepan along with other 2 cans of whole beans.

Simmer 20 - 30 minutes.

Top each serving with shredded cheese, if desired.
