1¼ cup sugar
½ cup of butter or margarine, softened
2 eggs
1½ cups mashed overripe bananas
½ cup buttermilk (substitute ½ cup milk, stir in ½ tbdp, vinegar, stir, let sit for 5 minutes)
1 tsp vanilla
2½ cup all purpose flour
1 tsp baking soda
1 tsp salt
1 cup chopped nuts (if desired)

Preheat to 350º
Grease bottoms only of 2 (8x4inch) loaf pans

*while oven is preheating, place bananas in skin (before mashing) in a baking sheet or pan in the oven to "roast" while you gather other ingredients, roast bananas until skin is black, let cool, peel and mash*

In a large bowl mix sugar in butter
add eggs, mashed bananas, buttermilk, and vanilla, beat with electric mixer on medium speed until smooth
stir in flour, baking soda, salt, (nuts if you choose) just until moistened
pour batter into pans

Bake 8 in loaves for 1 hr, 9 in loaves for 1¼ hr, or until toothpick is clean, small loaves cook usually 45-55 minutes
Loosen side of loaves from pans, remove from pans to cooling rack.
cool 1 hour before slicing
