1c finely diced Onion
1 c finely diced Celery
2c cubed potatoes
2cans Minced Clams in juice SAVE JIUCE
3/4 Butter
3/4c Flour
1 1/2tsp Salt
Dash Pepper
2tbsp Red Wine Vinegar
1 small bottle Clam Juice
1 qrt Heavy Cream

Directions:
Directions:
Add all diced veggies to a large pot. Drain juice from clams and the bottle of clam juice over the veggies (just enough to cover veggies - add water if needed). Cook until almost done.
In separate pan melt the butter over medium-low heat, then add the flour. Stir constantly with a wooden spoon in a figure-eight motion for even cooking. In 3 to 5 minutes, you'll have a light roux that should puff slightly. Add cream. Cook until smooth and thick. STIR CONSTANTLY. Add the clams juice/veggie mixture and vinegar. Heat to warm.
