Olive oil cooking spray
8 celery ribs rinsed
1 (3-4 ribs) standing rid roast about4 ½ lbs
1½ tsp coarsely ground pepper
¼ cup frozen diced onions
2 tsp chopped garlic
1 (14 oz)can low-sodium beef broth
16 oz fresh whole mushrooms (rinsed)

1. Preheat oven to 325º. Coat 9”x13” baking dish with cooking spray
2. Cut celery into 7-inch ribs – lay across center of dish – place roast on top with fat side up – sprinkle with salt, pepper,
onions, and garlic.
3. Add broth and mushrooms around roast – bake 2½ hours or until internal temperature reaches 145º for medium rare
up to 170º for well done.
4. When the desired temperature is reached remove from oven – cover loosely with foil and let roast stand for 10 to 15
min before slicing
