Ingredients: 2 boxes dry macaroni pasta 8 oz. block mild cheddar cheese 8 oz. block white cheddar 8 oz. block muenster cheese 3 Tsp. butter 1 can evaporated milk 1 cup heavy cream 3 Tsp. cornstarch Salt to taste Breadcrumbs (optional) Cooking spray

Directions:Cook pasta per package instructions.
Grate cheeses and combine them with butter, evaporated milk, cream, cornstarch and salt and cook over low heat, stirring until combined.
Pour the cheese mixture over the pasta in a baking dish treated with cooking spray and top with breadcrumbs, if desired. Bake at 350º for an hour or until the top is crispy and bubbling at the edges. |

Notes: Grandma Charlotte was known for many wonderful traits, especially her sense of humor and how delighted she would get every year opening her Christmas presents. Cooking... not exactly her strongest suit. Somehow we survived the questionable pasta sauces and liverwurst sandwiches on Saltines. The one standout dish she made better than anyone else was her baked mac and cheese. I tried to recreate the recipe myself but apparently I made it too fancy, but I’m leaving it in here anyway by request.
