4-6 lb beef tenderloin
4 tsbsp. softened butter
1½ tsp. salt
¼ tsp. pepper

Directions:
Directions:
1. Tie up skinny end of tenderloin and set meat outside to adjust to room temperature.
2.Preheat oven to 450º
3. Rub in butter.
4. Roast for 5 minutes at 450º then drop temperature down to 130º and roast for 7-8 minutes per pound for medium rare.
5. In the last 10 minutes, brush with 1 tbsp butter.
6. When done, remove from oven and let rest for 5 mins. Sprinkle salt and pepper.
