12 lbs. apples
4 quarts cider
6 lbs. dark brown sugar
1½ tsp. cloves
½ tsp. mace
2½ tsp. cinnamon
1 tsp. salt

Directions:
Directions:
Cut apples into pieces and place apples in a deep baking dish.
Add cider.
Place in oven at 400º and bake until soft.
Press through sieve.
Return to oven and cook until cooked down considerably.
Add brown sugar, cloves, mace, cinnamon, and salt and mix. [Tip: Sweetness depends on the amount of sugar added; use less if apples are already sweet; or to taste.]
Return to oven and cook until cider does not separate or until the mixture is very thick.
Stir occasionally so as not to burn.
Take out and cool down.
Seal in sterile jars.
