1 Cup all-purpose flour
½ Cup butter or margarine, softened
¼ Cup powdered sugar

2 Eggs
1 Cup granulated sugar
½ tsp. baking powder
¼ tsp. salt
2+ Tbsp. fresh squeezed lemon juice (1 large lemon or 2 small ones)

Directions:

Heat oven to 350 degrees.

Mix thoroughly flour, butter and powdered sugar. Press in ungreased square pan, 8x8x2 inches, building up a ½-inch edge. Bake 20 minutes.

Beat remaining ingredients about 3 minutes or until light and fluffy. Pour over hot crust. Bake about 25 minutes longer or just until no imprint remains when touched lightly in center. Cool; cut into squares and sprinkle with powdered sugar.

I don't remember where I got this recipe, but they are the best lemon bars I have ever had. You HAVE to use fresh squeezed lemon juice to get the best lemon bars.
