2 cups sugar
4 eggs
1 1/3 cup oil
2 cups flour
2 tsp. baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 tsp. allspice or cloves
3/4 cup coconut
3/4 cup chopped nuts
3 cups grated carrots
8 oz. crushed pineapple
2 tsp. vanilla

Directions:

Beat sugar and eggs until thin and pale. Stir in oil. Mix dry ingredients together, add to sugar/egg mixture. Stir until smooth. Fold in carrots, pineapple, cocnut, nuts and vanilla. Pour into 9 x 13 pan. Bake in preheated 350º oven for 45 - 55 minutes or until toothpick comes out clean.

3 rounded T. flour
1 cube margarine
3 rounded T. shortening
1 cup milk
1 cup sugar
1 tsp. vanilla

Directions:
Directions:
Cook flour and milk until very thick - stir constantly. Cool completely.
Cream sugar, shortening and margarine. Add vanilla. Add to first mixture and mix well.
