1 C Oil
2 C sugar
2 C shredded (fine or ground) zucchini
1 t vanilla
3 C flour
1 t salt
1 t soda
3 t cinnamon
¼ t baking powder
1 C chopped walnuts - optional

Mix everything together. Bake 325º approximation 45 minutes. Insert toothpick to test.

I like tea loaves. It seems the bread goes further and it freezes nicely. You can use any pan. Fill pan 2/3 fill. The bread will rise! In summer in Oak Harbor, WA, anyone who grows vegetables will grow zucchini. Their crops are abundant! Someone is always looking for someone to give the zucchini to. Of course, that meant the zucchini bread was not a welcome gift, everybody was making the bread!
