⅓ cup granulated sugar
1¼ tsps. baking powder
½ tsp. baking soda
¼ tsp. salt
2 large eggs
2 cups buttermilk
2 tsps. pure vanilla extract
6 Tbsps. unsalted butter, melted and slightly cooled (plus more butter for greasing)
2¼ cups all-purpose flour ( spoon & leveled)

Melt butter and set aside to slightly cool, you don’t want it piping hot .In a large bowl, combine dry ingredients. In another large bowl, whisk eggs, buttermilk, and vanilla extract together then whisk in the melted butter. Blend wet and dry ingredients by hand together to gently combine. Batter will be thick with a few lumps. Heat a griddle over medium heat. Coat generously with butter. Once hot, drop batter on the griddle and cook until the edges look dry and bubbles begin to form on the sides (1 minute). Flip and cook other side until cooked through, about 2 more minutes. Coat griddle/skillet again with butter for each pancake or batch of pancakes. Keep pancakes warm in a preheated 200°F (93°C) oven.
