Version 1:

600 g. extra-lean ground beef
1 can tomato paste
⅛ - ¼ cup water
½ onion, grated
3 small potatoes, grated
½ tsp. minced garlic
½ tsp. salt
½ tsp. pepper
½ cup bread crumbs
½ cup fresh or frozen kernel corn (optional)
1 tbsp. barley, pre-soaked

¼ - ½ cup grated cheddar

Version 2 (a.k.a. Dad's Meatloaf):

600 g. extra-lean ground beef
1 egg, beaten
½ cup ketchup
½ cup BBQ sauce
½ cup bread crumbs
½ package onion soup mix
2 tbsp. barley, pre-soaked
1 tbsp. water

Directions:
Directions:
For either version, one hour before baking, soak the barley in boiling water. Drain.
Oven to 350º F. Mix together the ingredients, except the cheese, and pack it into a loaf pan.

For version 1, top with the cheese.

For version 2, top with a bit of a BBQ sauce/ketchup mixture.

Cover with foil and bake for 75 minutes.
