1½ cups sugar
¼ cup boiling water
1⅔ cups sugar
4 tablespoons heaping cornstarch
3 eggs
6 cups milk
1 pint cream
1 to 2 teaspoons vanilla

Directions:
Directions:
Place 1½ cups sugar in HEAVY pan and slowly burn over low heat to a dark brown color (30 minutes or more). Add boiling water to form a syrup.

For the custard, use 1⅔ cups sugar and cornstarch. Mix well. Add 3 beaten egg yolks (save egg whites) and milk and cook over medium heat. When liquid is thoroughly heated thru, add the sugar syrup and continue cooking until thickened, stirring constantly.

Strain through sieve or colander into freezer bucket (1½ gal.) and let cool. Add cream and enough milk to fill can ¾ full. Top with 3 beaten egg whites and stir slightly before starting to freeze. Vanilla enhances flavor.
