1 whole head smoked garlic
1 medium cauliflower
1 litre whole milk
70g butter
70g plain flour
250g shredded mature cheddar
handful finely grated Parmesan
1 tsp nigella seeds

Directions:
Directions:
Wrap the whole, unpeeled garlic in foil and bake for 40 minutes at 200º C, until skin is golden and flesh is soft.
Break cauliflower into florets, discarding tougher stalks. Warm the milk in a saucepan over moderate heat. Break the garlic into cloves, peel away the flaky skin and squeeze the flesh from each clove into the milk. When the milk is hot (but not boiling) remove from heat and leave it for 20 minutes. Boil or steam cauliflower for 5-7 minutes and drain.
Melt butter in a pan. Stir in flour and cool for 5-6 minutes, stirring constantly; slowly adding the milk and garlic. Sauce should be smooth enough to coat the back of a spoon. Add the cheddar and stir into the sauce and season with salt and pepper. Leave over very low heat to simmer, stirring from time to time to avoid burning on the bottom. Add cauliflower and sauce to a baking dish then add grated Parmesan and nigella seeds. Bake for 25-30 minutes or until slightly browned and bubbly.

Best served with a pork chop and roasted spuds unless you're lardy and need to get into a suit for your niece's wedding; in which case, no spuds.
