1 red onion
4 carrots
1 sweet potato
1 red pepper
1 yellow pepper
1 courgette
4 whole cloves of garlic
2 tbsp of olive oil
fresh rosemary
fresh thyme
1 tbsp of Italian seasoning

Directions:
Directions:
1 chop up all the vegetables in to medium side chunks.

2 place all the ingredients in to a large baking tray, cover with the oil and italian seasoning, add the whole cloves of garlic. then place the fresh rosemary and thyme ontop.

3 place in to a pre heated oven 180 degress gas mark 5, for about 45 minutes. serve along side home made pie, sauasges and mash or why not just add to some fresh spinach and eat as a snack.
