Egg Strata

8 corn tortillas
11 oz Mexicorn, do not drain
2 c Monterey Jack cheese, grated
1 c cheddar cheese, grated
12 eggs
1 c milk
½ t salt
¼ t pepper
½ t cumin

Directions:
Directions:
Preheat oven to 375º. Cut 4 tortillas into 1-inch pieces. Sprinkle over the bottom of a greased 9" x 13" inch baking dish. Top with half the corn, 1 cup of Monterey Jack and ½ cup cheddar cheese. Repeat layering with 4 tortillas, corn and cheese. In a large bowl, whisk together eggs, milk, salt, pepper, and cumin. Pour over tortilla layers and bake about 30 minutes. Serve with Salsa Fresca. You may also add bacon, sausage or ham to this dish.
 

Salsa Fresca


Ingredients:

14.5 oz can diced tomatoes
4.5 oz can diced green chiles
2 T lime jice
½ t cumin
¼ t sugar
½ t salt
¼ t pepper

Directions:

Stir all ingredients together in a small bowl. Serve with Egg Strata.
