1 large white onion
2 Garlic cloves
1 red pepper
1 yellow pepper
1 tbsp Cumin
pinch of cinnamon
1 tsp cayenne pepper
1 tsp soya sauce
1 tbsp tomato paste
2 tins of chopped tomatoes
1 tin of mixed beans
fresh herbs to garnish
100g of rice

Directions:

1 Rinse the rice and add to a sauce pan of cold water bring to boil then simmer for 15-20 minutes keep an eye on the pan and stir once too make sure the rice does not burn.

2 Fry the garlic onions and pepper together for 5 minutes until soft, then add all the dry ingredients, soya sauce and cover stir a few times then add the tomato paste. Cook for a minute.

3 Add the chopped tomatoes and mixed beans simmer for 20-30 minutes.

4 Drain the rice and serve with fresh herbs for garnish.

This is one of my favourite recipes to batch cook you can also add red lentils for added protein and to bulk it out. This dish goes well with rice, in a jacket sweet potato, with homemade chips and side salad, a wrap with some couscous and spinach, in a pie or on its own. it can be kept in the fridge for up to 5 days.
