1½ cups warm water
1 tsp. sugar
1 package active dry yeast
1 tbsp. olive oil
4¼ cups all-purpose flour (or 3 cups all-purpose + 1¼ cup whole wheat flour)
1½ tsp. salt

Directions:
Directions:
In Kitchen Aid mixing bowl, combine the warm water and the sugar. Sprinkle in the yeast and let it stand until foamy, about 5 minutes. Stir in the oil.
Add the flour and salt to the liquid and, using bread hook, mix the dough until it forms a ball. Let it knead for a few minutes until smooth and elastic.
Spray a large bowl with cooking spray; put the dough in the bowl. Cover the bowl tightly with plastic wrap and let the dough rise in a warm spot until it doubles in size, about an hour.
Punch down the dough, and cut it in half. Refrigerate or freeze in floured zip-close freezer bags at this point or use right away.
Roll out as needed on a lightly floured surface.
Bake at 450º F in the lower part of the oven until the crust is golden and the cheese melts, about 15 minutes.

You can also mix this by hand or use a food processor. Knead by hand for 10 minutes.
This dough recipe makes two 13 or 15-inch diameter pizzas or one large cookie sheet pan pizza. Alternately, use all of it to make the Pull Apart Pizza Balls on page 45.
