Ingredients: ¾ lb (½ pkg) loose-pack frozen whole strawberries 1 pkg (10 oz) frozen sliced strawberries with syrup 1 can (6 oz) frozen orange juice concentrate 2 envelopes plain gelatin 6 tbsp sugar ½ tsp salt 1 pint heavy cream to whip 1 pkg lady fingers, split 1¼ cups of water

Directions:1. Let both containers of frozen strawberries defrost (6 hours in refrigerator or 3 hours in kitchen) – thaw the frozen orange juice just enough to make it slide our of the can and combine it with water – stir to blend 2. Measure 1 cup of orange juice into a small sauce pan and sprinkle gelatin over it - stir in sugar and salt the stir over low heat until gelatin is dissolved, continue to stir while adding the remainder of the orange juice – chill in refrigerator until slightly thickened (if it should harden too much, reheat over boiling water to melt and then rechill to proper consistency). 3. Whip the cream stiff and fold into chilled gelatin mixture – put the lady finger cookies around the outside of the mold then pour the gelatin mixture into a ring mold – chill until firm 4. To serve unmold onto a cold plate – have the sliced strawberries and the whole ones lightly tossed together so all are covered with juice – fill the center of mold – slice the Charlotte to serve it with the berries spooned over the slice. |
