1 cup all-purpose flour
¾ cup whole wheat pastry flour (or additional all-purpose flour)
¾ cup packed brown sugar
1 tablespoon baking powder
1 teaspoon orange zest
1 teaspoon cinnamon
½ teaspoon salt
2 eggs
⅔ cup milk
⅓ cup canola oil
⅔ cup chopped dates
⅓ cup chopped walnuts

Preheat oven to 375 degrees F. Spray 3 mini loaf pans with cooking spray and set aside.
In a large bowl, stir together flours, brown sugar, baking powder, orange zest, salt, and cinnamon.
In a medium bowl, whisk together eggs, milk, and oil. Add wet ingredients to the dry ingredients and stir until just combined.
Fold in the dates and walnuts.
Pour the batter into the prepared pans and bake for 20-30 minutes, or until a toothpick inserted in center comes out clean.
Cool on wire racks. These can be wrapped tightly and stored in the freezer until ready to use.
