3 cups vegetable broth (I've been using bone broth lately, because it's so healthy)!
1 cups uncooked bulgur
6 tablespoons olive oil
2 tablespoons lemon or lime juice
2 tablespoons minced fresh parsley
salt and pepper
1 can (15 oz) garbanzo beans or chickpeas, rinsed and drained
2 cups cherry tomatoes, halved
1 cup chopped cucumber
8 green onions sliced
1 package (4oz) crumbled feta
cup pine nuts toasted

Directions:

In a large saucepan bring broth and bulgur to a boil over high heat, reduce heat, cover and simmer for 20 minutes until tender and broth is almost absorbed.
In a small bowl whisk the oil, lemon or lime juice, parsley and salt and pepper.
In a serving bowl combine bulgur, beans, tomatoes, cucumber and onions. Drizzle with dressing and toss. Sprinkle with cheese and pine nuts.

Catherine always wants to eat all this healthy crap and sneers at what we eat! I make this for her and we all like it and it's good for you too!! Make a lot and it's good warm or cold.
