1½ pounds lean ground beef
1 medium red pepper chopped
1 small onion (I like purple, but any will work)
1 can diced tomatoes, drained (14 oz)
1 package ready to serve brown rice
1 cup frozen corn
2 tablespoons chili powder
1 can tomato sauce (8 oz) If it seems runny I add a small can of tomato paste
salt and pepper

Toppings: shredded lettuce, chopped fresh tomatoes, cilantro, reduced fat sour cream, shredded cheese, taco shells and flour tortillas.

Directions:
Directions:
In a dutch oven, cook beef, red pepper, and onion over medium heat till no longer pink and vegetables are tender. As cooking, break up beef to crumbles. Drain and put back into dutch oven.
Stir in all ingredients except rice and bring to a boil, add rice and heat through.
Serve in shells, tortillas. Sometimes I make a salad and add this on top with sour cream and salsa.
Makes a lot and it's great next day for lunch!
