2 Red or yellow peppers
8 -10 Mushrooms (I use chestnut)
1 Onion
Cubed roast butternut (small portion each)
Garlic to taste
Salt & pepper to taste

Directions:
If you add butternut then roast it first in little cubes in the oven - you could also roast the mushrooms and onions with it (adding later as the butternut will take longer) I take the skin off the butternut. You can also fry the onions, mushrooms and garlic and then add butternut.

Cut the very top of the pepper off and de-seed and wash. Cover with a little oil and salt and pepper.
Bake in oven for around 10mins bottom side down and then 10 mins top side up (or until soft but not mushy)

Stuff the peppers with the mixture.

Put cheese on the top and roast in oven for around 15 mins. I serve with either a baked sweet potato or Quinoa and some kind of veg like cabbage

This is a great veggie dish with lots of options. You can also stuff the peppers with mixed beans, courgette, bacon, ground beef, rice or whatever! These have gone down well with guests.
