1 Banana - mashed
2 Tbsp coconut oil (or other)
1/2 cup Tigernut flour (get this from Amazon or elsewhere)
1 egg (I use duck as it's more nutritious)
1/2 tsp baking soda

OPTIONS:
I like to make chocolate ones so I add 2 Tbls of cocoa powder
You can also add blueberries and cocoa chips
I often add 2 tsp ginger
1 tsp cinnamon

Mix all ingredients together and put in muffin moulds - It makes 3 big ones or 4 medium.

Bake at 180º C for 12-15 mins. Do not over cook - the middle should still look soft when you take them out as they continue to cook out of the oven and get too dry, if overcooked.
