One 16 ounce bag frozen tater tots
Butter for baking dish
1pound spicy breakfast sausage
1 Tablespoon olive oil
1 medium onion
1 cup milk
1/2 cup half and half
1/4 teaspoon salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper
1green bell pepper
1 cup grated pepper jack cheese
1 cup cheddar cheese

1 Line tater tots in 13 x 9 inch baking pan.

2 Add olive oil to a large skittet over medium heat. Add sausage and onion and cook til brown about 8 - 10 minutes. Set aside to cool slightly then sprinkle over tater tots.

3 In a large bowl mix milk, half and half, eggs and peppers and half both cheeses. Pour over tater tot mixture. Top with rest of cheese.

4 Cover with foil and refrigerate overnight
5 Bake covered for about 25 minutes. Uncover and continue baking until cheese is brown and bubbly, about 20 - 25 minutes.

6 Cut into squares and serve.
